The stones are an essential part of the Chocolate Refiner because it is their shearing action that causes the particles in the chocolate to break down, and particle size determines mouthfeel in the finished product. Please kindly make sure you select the right type of roller stones for your holder. The stainless holders use a 10 mm shaft whereas the Plastic stone holders use an 8 mm shaft.
