LCM tempering machines offer a unique method of tempering chocolate that results in a better and more consistent chocolate product. This is due to the fact that chocolate continually flows into and out of the filling tank through a system that decrystalizes and retempers the chocolate at each pass. The system mimics the traditional method of hand-tempering on a slab of marble. Even after hours of production, the chocolate has perfect crystallization, viscosity and gloss, resulting in a stable product. Machine cleaning and changeover are easy and efficient and can be completed in roughly thirty minutes.
