The stones are an essential part of the Chocolate Refiner because it is their shearing action that causes the particles in the chocolate to break down, and particle size determines mouthfeel in the finished product. The stones in our machines are made of natural granite and so some color variation can be expected. Sold as a set of two (2) wheels. Width: 1.375 in; Height: 4.125 in.
Suitable for the 8lb/3kg capacity Small Premier Chocolate Refiner (countertop model).
Please kindly make sure you select the right type of roller stones for your holder. The stainless holders use a 10 mm shaft whereas the Plastic stone holders use an 8 mm shaft.
