Ingredients:

⅔ cup

Shredded unsweetened coconut

1 cup

Old-fashioned oats

▻▷

125g

½ cup

Creamy peanut butter

▻▷

40g

3 tbsp

Ground flaxseeds

▻▷

60g

½ cup

Dried cherries

▻▷

70g

½ cup

Sunflower seeds

▻▷

85g

¼ cup

Honey

▻▷

30ml

2 tbsp

Water (optional)

 

Directions:

  1. In a frying pan,toast coconut on medium heat for 1 minute stirring constantly.
  2. Combine all ingredients in a large mixing bowl except for the water;
  3. Cover and refrigerate for 30 minutes;
  4. If the mixture is too dry to work into small balls, add the water;
  5. Roll into small, equal sized balls, about the size of a cherry.

Yield: 20 bites

Storage: up to 1 week in the fridge in an airtight container or freeze them and defrost as needed.
